Dirty Rice!


Despite its unappetizing name, this dish is a family favorite! And it's super simple to make, I promise. Just a small note: we have a family of 6 and this recipe feeds us with enough for seconds AND leftovers!

Ingredients:
1 family-sized box Zatarain's dirty rice mix (this is the part that makes it easy)
3.5 cups hot water
1.5-2 pounds hamburger (can make half of this spicy ground sausage for a tasty variation)
0.5 cup diced onion
0.5 cup diced green pepper
1 small can petite diced tomatoes, undrained
1 can whole kernel corn, drained
Optional:
additional seasoning such as Old Bay Seasoning, garlic powder, Mrs. Dash, etc.
shredded cheddar cheese
sour cream

In a 5-quart stock pot or Dutch oven, brown the meat with the onion and green pepper. Drain off most of the grease, keeping about 2 tablespoons or so in the pan. Add the hot water, tomatoes, corn and additional seasoning and bring to a boil. Stir in the dirty rice mix, cover, reduce heat to low and simmer 25 minutes, stirring once during cook time. Remove from heat and let sit uncovered for 5-10 minutes before serving. Garnish with shredded cheese and/or sour cream. Enjoy!

hmmm sounds tasty. I've never used Zatarains before, think I'll add that to the shopping list soon!
